1 cup Gram chickpeas (Chana/chole) – soaked overnight

1 teaspoon of baking soda
2 medium tomatoes – finely chopped or blended
1 green chilli – slit lengthwise (optional, for spice)
1 tbsp ginger-garlic paste
1/2 tsp turmeric powder
1/2 tsp red chilli powder – adjust to taste
Salt – to taste
2 tbsp oil or ghee
1-2 black tea bags (optional, for colour)
Fresh coriander leaves – for garnish
Lemon wedges – to serve

Simple Recipes to make restaurant like Chana/Chole

Step 1: Prepare the Chickpeas

Choose the finest and quality chickpeas for Chana/Chole, soak them overnight. In the morning, rinse the soaked chickpeas, drain them, and add them to a pressure cooker with 3 to 4 cups of water, and add bay leaf, cinnamon, cardamom, black pepper, clove, salt, baking soda, and tea bag (optional) for perfect colour. Cook for 5 to 6 whistles or until the chickpeas get tender and soft.
Once the chickpeas get tender, discard the tea bag, drain the chickpeas or set the cooked chickpeas aside along with the cooking liquid.

Step 2: Make the Masala Base

Heat oil or ghee in a pan on medium flame. Add bay leaf, cumin seed, black pepper, clove and saute them until golden brown. Add the chopped onion, ginger and garlic paste, finest chopped chillies and saute them until golden brown.
Cook them until the raw smell disappears and a flavorful aroma fills the room.

Step 3: Add the Spices

Add tomato purees, turmeric powder, and red chillies. Cook them until the oil starts to separate from the mixture.
Now, add SDS Chana/Chole Masala, stir well to blend the spices into masala base. Allow the spices to cook for 2 to 3 minutes for a burst of flavours.
Step 4: Combine Chickpeas with Masala
Now, add the boiled chickpeas along with some of the reserved cooking water. Mix everything well and let the chickpeas soak up the whole flavours from the masala.
Cover and let it simmer on low heat for 15 to 20 minutes until the chana/chole thickens and flavours deepen. Add more reserved water if you need.

Step 5: Final Touches and Garnish

Garnish the fresh and green coriander, stir them well.
You can sprinkle the lemon juice (optional) over the chana/chole and now it is ready for the serving.
